Jazz Bistro’s kitchen is lead by Indian born Executive Chef Umesh Diwaker. A passionate, self-motivated Chef who believes in classic French-style cooking with a progressive edge.
The vision for Jazz Bistro is to leave every guest with an unforgettable dining experience paired with world-class Jazz performances six days a week.
Chef Umesh prefers to cook with locally grown produce and fresh ingredients daily, experimenting with contrasting flavours, textures and colours from appetizers to desserts reflected.
Chef Umesh graduated from India’s National Council of Hotel management located in 2002. Upon conclusion of his culinary training, Umesh worked in 5-star hotels and higher luxury class resort chains in India; Claridges, Oberois, Orchid and Aman Resorts to name a few.
Working with Carnival cruise lines, Florida USA from 2004-2007, Chef Umesh had the privilege of travelling to France, Italy, Greece, Caribbean, South America, Mexico and Turkey to explore the flavour profiles and taste various food trends of these countries cuisine.
Since Chef Umesh’s arrival in Canada in 2012, he has launched a career in upscale fine dining restaurants. Progressing quickly from high volume kitchens at the Rogers Centre, Exhibition Place, and Westin Harbour castle to most recently at an upscale Golf and Country Club in Toronto as Executive Sous Chef and now, at Jazz Bistro as our Executive Chef.
Chef Umesh would like to extend a warm welcome to all Jazz Bistro guests and assure them the highest level of food quality and hospitality standards.
